Method

  • Step 1: Roast the carrots in olive oil until soft, then add the carrot juice and blend them into a dressing or sauce for the dish.
  • Step 2: Now, prepare your broccoli and tofu by roasting or baking them, using olive oil, salt, and chili flakes to your taste.
  • Step 3: Next, make your brown rice by cooking it for 30-35 minutes in an air fryer.
  • Step 4: Serve after putting all the items in a Mediterranean rice bowl and garnish it with sesame seeds.

Quick Chicken Hummus Bowl

Ingredients

  • 200g rice
  • 150g spinach
  • 1 chicken breast, sliced
  • red onion
  • 100g pomegranate
  • 200g hummus
  • 1 avocado
  • 2 tbsp almonds
  • One lemon, zested and juiced

Method

  • Step 1: Make a liquid sauce by mixing two tablespoons of hummus, half of the lemon juice, the zest of one lemon, and some water.
  • Step 2: Then, put the rice in two small bowls and mix them with the hummus sauce and boiled spinach.
  • Step 3: Squeeze the lemon juice over each avocado and then put it in the Mediterranean rice bowl as a side.
  • Step 4: To serve, place the chicken, pomegranate seeds, onion, nuts, and any extra Hummus.

Fajita Chicken Rice And Lime

Ingredients

  • 2 chicken breasts
  • 200g baby corn
  • 2 red onions, sliced
  • 400g brown rice, cooked
  • 2 tsp vegetable oil
  • 2 peppers, sliced
  • 15g chopped coriander
  • 400g drained black beans
  • 3 tsp chipotle paste
  • One lime, zested and halved

Method

  • Step 1: Preheat oven to 220C and butter a large baking pan.
  • Step 2: Add the chicken, peppers, red onions, and baby corn to the pan, and then add the chipotle paste.
  • Step 3: Now, add the lemon and cover the chicken and vegetables with oil. Wait 20 minutes for everything to cook nicely.
  • Step 4: Season the black beans and cook them in a small pan on low with coriander and lime zest. Pour roasted lime juice over the top.
  • Step 5: Slice the chicken thinly and place it on the serving plates. Add brown rice and vegetables on top. Garnish with the final coriander, then serve!

Sweet Potato And Cauliflower Lentil Bowl

Ingredients

  • 1 cauliflower chopped
  • 1 tbsp garam masala
  • 3 tbsp groundnut oil
  • One large sweet potato with skin on
  • 200g puy lentils
  • 2 garlic cloves
  • 1 tsp Dijon mustard
  • cup of coriander
  • 2 carrots
  • One thumb-sized piece of ginger, grated
  • 1 limes, juiced
  • red cabbage

Method

  • Step 1: Heat the oven to 200 degrees Celsius (180 degrees Fahrenheit for fans). Sprinkle the sweet potatoes and cauliflower with some hot spices like garam masala. Spread them out on a big baking tray. Now add garlic and let the potatoes cook for another 30 to 35 minutes.
  • Step 2: Now, add lentils to 400 ml water in a saucepan. Boil the lentils for 2025 minutes.
  • Step 3: Now, blend garlic, ginger, mustard, sugar, and three-quarters lime juice in a large dinner bowl. Then, add salt and pepper.
  • Step 4: The next step is to grate the carrots and cilantro coarsely. Taste for salt after adding the final lime juice and make a fine sauce.
  • Step 5: Put the lentil mixture into a container if you want to store it and chill it later and on serving plate. Then garnish the sweet potato and cauliflower mix with a carrot sauce. You can also add further pepper and salt to enhance the flavours even more.

Healthy Beef Chow Mein

Ingredients

  • 200g fillet steak, sliced
  • 2 tsp oil
  • 85g noodle
  • 160g beansprouts
  • 1 tbsp vinegar
  • 160g mushrooms, sliced
  • 1 tsp tamari
  • 65g spring onions, sliced
  • 15g ginger, chopped
  • 100g red onion, chopped
  • 2 garlic cloves, chopped

Method

  • Step 1: Start by boiling the noodles. (instructions will be given on its packet)
  • Step 2: Then stir-frying the beef on high heat until golden.
  • Step 3: Now, start stir-frying the onion and ginger until they soften. Cover and cook them for 23 minutes. You can also add a tablespoon of water to prevent them from burning.
  • Step 4: Add the mushrooms and garlic and stir them in-heat for three minutes or until the mushrooms start to soften. After this, you can add the beansprouts.
  • Step 5: Combine vinegar, tamari, and 2 tablespoons water in a small dinner bowl, and make a runny sauce. Add the meat, spring onions, and soy mixture to the skillet with the noodles. Stir-fry for a few minutes to heat it.
  • Step 6: Add plenty of black pepper for flavor, and there you have it: a meat and veggie bowl for kids and adults!

Sesame & Ginger Sushi Bowls

Ingredients

  • 200g rice
  • 320g edamame
  • 2 avocados
  • 50g tomatoes
  • 25g ginger
  • 1 carrot
  • 5 tbsp vinegar
  • 2 tsp sesame oil
  • 1-2 tbsp tamari
  • cucumber
  • 3 tbsp sesame seeds

Method

  • Step 1: Slice the ginger thinly. Place it in a dish with four tablespoons of vinegar and one tablespoon of water. Massage it to soften it.
  • Step 2: Pour 600ml water over the rice in a medium pan. After boiling, cover and simmer on low for 15 minutes. Add the edamame beans without mixing. Cover and cook for seven more minutes. The rice should be soft after absorbing all the water.
  • Step 3: Remove the beans from the rice and set them aside. Mix vinegar and tablespoons tamari well into the rice. Place on a platter and let it cool at room temperature. After cooling, serve it in the dishes. Add avocado, beans, carrot, cucumber, and tomatoes on top.
  • Step 4: After baking, sprinkle the ginger over the vinegar. Add the remaining tamari and sesame oil to the vinegar. After spooning the sauce over the sushi, sprinkle seeds on top.
